Storage vs. serving are different numbers. Storage temperature keeps a wine stable for aging; serving temperature is what actually goes in the glass — often 4–11°F apart. Whites and sparkling get chilled below their storage temp before pouring; full‑bodied reds are allowed to warm slightly above it. When in doubt, slightly too cold beats too warm — a glass warms in your hand in minutes.
